Dark green seeds are the best indication of pumpkin maturity. At harvest, the pumpkins are split with a machete or axe in the field, and seeds are scooped out by hand. The seeds are washed in water to rinse off residual pulp, then dried at 50-70C. Machine harvesters for oilseed pumpkins are available, but for this preliminary work hand harvesting was done using casual labourers.
