At maturity, the pumpkins turn a striped orange and green. The stem should be woody, and the skin will be not easily dented. Larger pumpkins may sound hollow when thumped. The season for these pumpkins is long (over 100 days), and achieving full maturity may depend on having a long, warm fall.
